Spicy Shrimp Salad

Ingredients:

  • 1.5 cups spinach

  • 1/3 cup halved cherry tomatoes

  • 1/2 cucumber cut into 1/2 inch slices and then halved

  • 1/2 orange bell pepper

  • 2 Tbs sunflower seeds

  • 6 - 8 shrimp peeled, deveined and tails removed

  • Primal Palate taco seasoning - or make your own using cumin, paprika, cayenne and chili powder

  • Primal Kitchen Chipotle Lime dressing

In a medium bowl, toss shrimp with taco seasoning and let it stand for 10 minutes.  Then heat avocado oil, grass-fed butter or ghee in a skillet and add shrimp to pan.  Cook until pink throughout - about 3 - 4 minutes.  

In another bowl toss spinach, cherry tomatoes, cucumber and bell pepper.  When done, add the shrimp.  Drizzle with chipotle lime dressing and sprinkle with sunflower seeds.  Enjoy!
